Hello my angel-faces! To get over the Bank-Holiday-blues, I thought it might be nice to share a new recipe for vegan salted caramel pancakes. These are not fully allergen free, as the salted caramel powder does contain pea protein (some people can be allergic/intolerant to legumes). But you could substitute many of the other ingredients, I included some recommendations below. I hope you like them and please tag me if you make them! Cooking time: 20 min
Ingredients (9 pancakes)
1/3 cup spelt or buckwheat flour (or regular flour, if you can tolerate wheat and/or gluten)
1/2 cup oats
1 scoop of Missfits Nutrition Salted Caramel protein powder (please note it contains pea protein)
1/2 tsp baking powder (you could susbtitute this with 1/4 baking soda and lemon juice0
1 tsp cinnamon
pinch of salt
1/3 cup almond milk (or oat or coconut milk if you want to avoid nuts)
1 egg (whisked) (or vegan egg replacer, or use a flaxseed egg)
1/2 mashed banana (save rest for topping)
1/2 tsp of coconut oil (plus a bit more more for cooking)â €
Method:
Mix dry ingredients in one bowl and the remaining wet ingredients in a separate bowl. Stir both well until they are fully mixed. â €
Combine the wet and dry ingredients together and mix until a smooth batter is formed.
Heat oil in a frying pan and add 2 tbsp of batter. After 2 mins, flip and cook on the other side for 1-2 mins. Repeat with the rest of the batter.â €
Top with your favourite fruit, nut butter or maple syrup. Enjoy!
