One ingredient ice-cream

I'm afraid I can't claim this as an original recipe, but it is one of my favourite things to do when I am craving something sweet and do not want to feel too guilty after... ;) Also, if somehow you end up with few bananas going a bit too ripe before you can eat them, it is a great way to save them! To be honest, my bananas sometimes do not even make it from being frozen to ice-cream... I just eat the slices with some melted dark chocolate!

Ingredients:
  • Ripe bananas (would recommend 2 per person)

  • Optional: dark chocolate chips, almonds or any other nuts.

Method:

  • Cut ripe bananas into slices and freeze them. I use freezer bags and stack them neatly, so it is easy to just grab a few slices (if you can control yourself, unlike me).

  • Add bananas to the food processor and blend them until smooth (picture below - yes, it does get everywhere and it is sticky).

  • Occasionally scrape down the sides and continue to blend until smooth, approximately 3-5 minutes. It takes a bit of patience if you are using a small processor like mine. If making it for more than one person, I make each portion individually and put it back in the freezer while I finish other bits.

  • Scoop into a bowl and enjoy! If I'm feeling fancy, I sprinkle dark chocolate (85%) chips and grate some almonds on top.

  • If you like a firmer ice-cream, place in an airtight freezer-safe container and freeze for at least 1 hour.
