American Pancakes (with a Spanish twist)

I have a soft spot for baking, and I am always looking for ways to make sweet treats just a bit healthier, a bit more nutritious! We all should have our cake, and eat it too!

In rainy weekends I like to make pancakes (ok, it is not technically baking), but they are great comfort food and you can add a bit of healthy fats (almond butter?) and some antioxidants (berries!) to round their nutritious value. This particular recipe is my take on American pancakes - they are just so fluffy! Main differences with traditional pancakes is that I use oat milk, olive oil (the Spanish in me can't help it!) and brown sugar, while I also substitute all syrups with organic honey. You could change the butter for ghee (haven't tried it yet!)

Ingredients (x8 pancakes): 150g plain flour 1/2 teaspoon salt 1 tablespoon baking powder 1 teaspoon brown sugar 225ml oat milk 1 egg 1 teaspoon of butter, melted Olive oil for the pan Honey

Method: Mix all the dry ingredients in a bowl, and make a little hole in the middle of the mix. Add the milk, the egg and the melted butter. Mix everything until smooth and onto the pan!
